Red Beans and Rice Recipe

1 lb smoked sausage cut into 1 inch pieces
2 cans dark red kidney beans
1 can water
1 large chopped onion
1 tsp minced garlic
3 bay leaves

shredded cheese

* Simmer all ingredients except rice & cheese for 1 hour.

* Refrigerate overnight.

* Serve over rice.

* Sprinkle with shredded cheese.

*Great served with warm corn bread.

This is a perfect recipe when you're really busy. I can throw it together in 10 minutes and it's ready when we get home the next day.~Susan
