1 small celery root
2 parsnips
3 medium carrots
1 large onion, chopped
3 tbsp. oil
3 tbsp. tomato paste
1 tsp. paprika
2 bay leaves
salt, pepper, sugar to taste
2/3 cup flour
1 tsp. Greek seasoning
1 egg, beaten
2 lbs. cod
4 tbsp. butter
lemon slices for garnish
parsley for garnish

Directions:
Directions:
Wash all root vegetables, peel and grate on the large size hole of grater. In a frying pan, sauté all grated root vegetables and chopped onions in oil until tender. Add tomato paste, paprika and bay leaves. Season with salt, pepper and sugar. You may need to add a few tablespoons of water if too dry. Cook covered until vegetables are soft and tomato paste is absorbed. Add Greek seasoning to flour; mix. Beat egg, then dip fish in egg, then dredge in flour. In a frying pan, melt butter and fry fish. Transfer cooked fish to a 9x12x2-inch pan and top with cooked vegetables. Decorate with lemon and parsley.

My sister-in-law always made this once a year for Christmas Eve. It was such a treat that she gave me the recipe so I could make it more often. The fish is great when served at room temperature, but the next day it's even tastier when served cold!
