4 cups potatoes, cooked
1/4 cup butter, melted
1/2 cup heavy whipping cream
1 tsp sugar
1 tsp salt
1 1/2 cups flour

Directions:
Directions:
Press hot cooked potatoes through ricer. Mix still warm potatoes with butter and cream. Mix in sugar, salt, and flour; may need to use your hands. Roll into balls and refrigerate.
Roll out very thin onto a floured cloth using a lefse rolling pin. Using a lefse stick transfer to griddle. Bake on a lefse grill at 500º. Turn once with a lefse stick. Lefse should be lightly browned on both sides. Transfer to a tea towel, and fold into quarters. Wrap 4 or 5 together in plastic wrap. Refrigerate or freeze for later.

Must use a lefse rolling pin. A lefse stick can be made by sharpening a wooden yard stick. Any large electric griddle can be used.
