1 cup salsa, any type
2 cans black beans, rinsed and drained
2 cups chicken broth
sour cream
lime or lime juice

Directions:
Directions:
Heat the salsa in a medium saucepan and cook for about 5 minutes.

Add the rinsed and drained black beans and chicken broth. Bring to a boil, then cover and simmer for 15 - 20 minutes.

Puree half of the soup in a blender. Return pureed soup to pan and reheat of necessary.

To serve, garnish with a squeeze of fresh lime or lime juice. Add a dollop of sour cream and/or salsa if desired.

I use my immersion blender and puree all the soup. I also really like a pineapple salsa because it adds a bit of sweetness to the soup.

I found this recipe in a copy of Real Simple magazine years ago. It has become a staple in our house.
