1 pkg. lime jello
1 c. boiling water
1 c. cold water
1 1/2 c. grated carrots

Directions:

Dissolve the package of jello in the cup of boiling water. Add the cold water. Stir
in the grated carrots, put it in a clear glass cake dish and refrigerate till set (about 2 hours). Serve plain or with whipped topping.

This was a regular dish at Mama's table. Especially in the summer as soon as the carrots were ready to be picked from the garden (she had carrots for a long time in the fall-in bushel baskets stored in the garage or in the fruit room in the basement. She canned and froze most of the carrots.) She did like her lime jello! But I think she liked how it looked too....very colorful. This was another salad I made quite often as it is easy and can be made ahead of time. I think Mama liked it for those reasons, too. It was an economical dish as well and that was always a plus in the Johnson household.
