Ingredients:  
Ingredients:  
1 to 1 1/2 lbs. Italian sausage, hot or mild
2 cloves garlic, minced
1 small onion, chopped
2 red peppers, sliced
2 cans diced tomatoes
salt or garlic salt to taste
parsley
1 1/2 c. quinoa or bow tie pasta
3 c. water
1 tsp. olive oil

Directions:
Directions:
1. In sauce pan over medium heat saute onions in olive oil while browning sausage
2. While sausage is cooking, cook quinoa or bow tie pasta according to direction on package
3. In separate pan, fry red peppers until skins begin to soften
4. When sausage is done dooking, add peppers and diced tomatoes to dish
5. Add salt or garlic salt to taste
6. Add parsley for color!
7. Add quinoa or pasta to dish
