Ingredients: 1 medium onion chopped 1 TBLS vegetable broth 3 Cups vegetable broth 2 carrots, peeled * 2 turnips, peeled* 1 sweet potato peeled* 1 zucchini sliced 1 red pepper cut into strips one can garbonzo beans drained 1 15 ounce can tomato sauce 1/4 teas. cinnamon 1/2 teas. turmeric pinch of saffron pinch of curry 2 cups couscous grains

Directions:All veggies marked with * should be sliced or julienned. In large sauce pan saute onion until lightly browned. Add vegetable broth and bring to a boil. Transfer to a large pot and add carrots, turnips and potato. Simmer 15 minutes. Lower heat and add zucchini and pepper. Cook 20 minutes. Add beans, tomato sauces and spices. Cook until heated through.
In separate pan bring 21/2 cups water to a boil. Add couscous. cover and take off heat. let stand 5-7 minutes. Fluff with fork and serve with vegetables on top. |
