3 bunches of beets, 1 horseradish, white vinegar, sugar, salt

WEAR GLOVES so your hands don't get stained! Clean and cut ends of beets (stems). Boil in salted water and simmer about 45 minutes. Peel off skin on beets. Peel off skin on horseradish. Grate beets and horseradish in separate bowls. Pour vinegar to taste over grated beets, add sugar, salt and horseradish to taste. The more horseradish you add the hotter it gets! Keep in cleaned pickle jar. Keep refrigerated.

I use a food processor to grate the beets and horseradish - Mom used a hand grater - I always cut my fingers on that!
