1 tsp lemon zest
1 tbsp lemon juice
4 c packed basil
3 tbsp minced garlic
1/2 c pine nuts
1 1/3 c extra virgin olive oil
1 tsp salt
1 tsp pepper
1 c Parmesan cheese

Add ingredients slowly to a blender or food processor and mix well.

A great way to make a large batch like this without letting any of it go bad is to freeze single-serving sizes. Line an ice cube tray with plastic wrap and spoon pesto into each hole. Place the ice cube tray in the freezer until the pesto is frozen, or hard to the touch. Use the plastic wrap to pop the pesto out of the ice cube tray and place in a freezer-safe bag or container to pull out cubes whenever you need it. A serving of pesto is usually 1-2 cubes/tablespoons.
