Ingredients: Parmesan Potato Stacks
3 tbsp butter, melted 2 tbsp Parmesan cheese 1 tsp garlic powder 1 tsp thyme leaves salt and freshly ground black pepper

Directions: |
Directions:Preheat oven to 350°F. Butter 12-cup muffin tin and set it aside.
Cut potatoes into thin slices then put into a zip lock bag (or large bowl). Add the melted butter, Parmesan cheese, and spices. Toss the mixture to coat the potatoes evenly. Layer the potatoes into stacks on their edges and place them into the muffin cups. Fan out the edges slightly. Sprinkle with more salt and pepper to taste. Bake the Parmesan potato stacks for 55-60 minutes or until the edges are golden brown and the center is tender.
Take them out of the oven and let the potato stacks sit for about 5-minutes before serving. Garnish with some extra Parmesan cheese and thyme.
TIP: Try oregano, basil, or rosemary instead of thyme. |
