1 cup large elbow macaroni
1/2 yellow onion chopped
1 carrot chopped
1 stalk celery chopped
1/4 cup flour
1 1/4 cup milk
32 oz. chicken broth (1 carton)
2 cups shredded cheddar cheese
1/4 cup grated Parmesan cheese

Cook macaroni and drain. Mince the chopped onion, carrot, and celery in food processor. In large saucepan, add 1 tbsp vegetable oil and vegetables. Cook, stirring, over medium heat until softened (4-5 min). Stir the flour into the vegetables. Gradually stir in the broth and bring to a boil. Cook, stirring, until thickened (6-7 min). Remove from heat. Add the milk, cheeses, and macaroni and stir until the cheeses melt. Season with pepper.
