2 1/2 cups all-purpose flour
2 cups quick-cooking oats
1/2 cup white granulated sugar
2 t. baking powder
1/2 t. salt
1 1/2 cups plain soy milk, almond milk
1 can do fruit pie filing

Directions:
Directions:
1. Preheat the oven to 350 F. Lightly oil a 9"x13" casserole dish and set aside.

2. In a large mixing bowl, combine the flour, oats, sugar, baking powder and salt. Add the soy milk, mixing until just combined. Spread half of the oats mixture into the bottom of the prepared dish. Spread the pie filling on top of the crust. Using your hands, place several tablespoons of the soft dough (it should be the consistency of a very thick batter) on top of the preserves until all of the dough has been used.

3. Bake for about 30=35 minutes, or until golden brown. Serve warm, at room temperature, or cold.

These healthy bars are delightful sweets for a fun breakfast, snack or healthy dessert. Feel free to add in chopped nuts, shredded coconut, or a drizzle of melted dairy-free dark chocolate for variation!
