Ingredients:  
1 whole chicken, roasted, deboned, and diced, about two cups of chicken
4 cups (1 box) Swanson chicken broth
2 ribs celery, split and sliced
2 sliced carrots
2 medium diced Vidalia onions
1/2 stick butter
1 teaspoon kosher salt
2 minced garlic cloves
1 cup of cooked rice
1/4 teaspoon ground pepper
4 sprigs fresh thyme

Directions:
Directions:
Melt butter on low heat in a 2 quart Dutch oven. Add celery, onion, carrots and thyme and sauté until carrots are tender. Add broth, chicken, garlic, and simmer for 30 minutes. Add rice, and salt and pepper to taste. Serve hot.
