ORIGINAL RECIPE
1 medium head cauliflower
1/3 cup chicken broth, warmed
2 tablespoons reduced fat sour cream
salt & pepper
fresh chives, thinly sliced, for garnish

HEALTHY VERSION
1 Bag Cauliflower Florets (steam-in bag)
2 tablespoons Greek Yogurt (or better yet 2 wedges Laughing Cow cheese)
Sea Salt & Freshly ground Pepper

ORIGINAL RECIPE
Place the cauliflower florets in a microwave safe bowl with 1/4 cup water,
cover with plastic wrap and microwave for 3 to 5 minutes, or until completely tender.
Place the cooked cauliflower in a food processor. Add chicken broth,sour cream,salt and pepper; puree until smooth. Serve garnished with sliced chives.

****HEALTHY VERSION****
Place the steam bag of cauliflower florets in a microwave for 3 to 5 minutes, or until completely tender. Pour into bowl and mash. Add Greek Yogurt (or cheese) salt & pepper to taste Serve garnished with sliced chives.
