Dough
2 c sugar
1 c shortening
2 eggs
2/3 c buttermilk
5 c flour
1 tsp salt
1 tsp baking soda
2 tsp baking powder
2 tsp vanilla

Filling
1 1 /2 c raisins
2 c water
1/2 c sugar
1 tsp cinnamon
2 Tbls lemon juice or vinegar
Butter (size of walnut in a shell)
2 Tbls cornstarch in 1/2 c water

Directions:
Directions:
Prepare cookie dough as usual. Roll the dough pretty thin about 1/8" (your putting two pieces together ). Cut tops and bottoms out with biscuit cutter.

Boil filling ingredients and then let cool.

Place a spoonful of filling on each bottom. Dip finger in water and go around edge of cookie bottom. Place top on and press down where wet and it will seal.

Bake at 350º until golden brown (10-12 min)
