2 pounds ground beef
1 cup uncooked rice
1 small onion
1/2 cup milk
1 tsp salt
1/8 tsp pepper
2 tablespoons melted butter
3 cups tomato juice
1 clove garlic mashed
1/2 cup diced bell pepper
1 chopped onion
2 tablespoons sugar
1 tsp Worcestershire

Directions:

Mix 2 pounds of ground beef with 1 cup of uncooked rice, 1 small onion, ¼ cup of milk, 1 tsp. salt, 1/8 tsp. pepper, and 2 T. melted butter. Mold into two inch balls and place in a large skillet. Add 3 cups of tomato juice, 1 clove of garlic mashed, ½ cup diced bell pepper, 1 chopped onion, 2 T. sugar, and 1 tsp. of Worcestershire sauce. Cover and cook about an hour until the rice comes thru like quills. Serves 4.

This recipe was my maternal grandmother’s (Wini Hughes and my mother Pat Samford made this for us all the time) It is a favorite! It appeared in the January 18, 1979 issue of the Sylvester Local in Wini’s Cooking School column.

When you are in a rush, you can use a good, organic spaghetti sauce instead of the homemade sauce above. Still add the Worcestershire sauce though.
