20 pt. asparagus spears
2¾ qt. cider vinegar (5%)
¾ c. brown sugar
1 clove garlic, per jar
¼ c. canning or pickling salt
2½ qt. water
1 tsp. cumin seed
1 tsp. crushed red pepper per jar (more or less according to taste)

Wash asparagus well, in cool water. Cut into jar-length spears.
Combine salt, vinegar, water, sugar and cumin seed. Heat to boiling.
Pack asparagus into pint or quart jars (tip ends down for easier removal).
Put 1 clove garlic and red pepper (to taste) in each jar. Cover with boiling brine, leaving ½" head space. Adjust jar lids and process in a boiling-water canner 10 minutes at altitude of zero to 1000 feet and 15 minutes of 1001 to 6000 feet.
