4 cups old fashioned oats
2 cups sweetened shredded coconut
2 cups sliced almonds
3/4 cup coconut oil
1/2 cup honey
1 1/2 cups diced dried apricots
1 cup diced dried figs or dates
1 cup dried cherries
1 cup dried cranberries
1 cup roasted unsalted cashews

1. Preheat oven to 350ºF
2. Toss the oats, coconut and almonds together in a large bowl
3. Whisk together the oil and honey in a small bowl
4. Pour the liquid over the oat mixture and stir with a wooden spoon until everything is coated.
5. Pour unto a 13x18 inch sheet pan and bake, stirring every 5-10 minutes, until the mixture turns golden brown, about 45 minutes
6. Removed granola from over and allow to cool, stirring occasionally
7. Add fruit and cashews. Store in airtight container.
