Colleen Schultz

1/4 c butter
1/4 c honey
1/3 c packed brown sugar
2 c quick cooking oats (not rolled)
1 c rice crispies
1/2 tsp vanilla
2 tbsp chocolate chips (I chop them up - they mix in better)

Stir together dry ingredients in large bowl.
Melt butter, honey and sugar in small pot until bubbling.
Reduce heat and simmer 2 min. Take off heat, add vanilla and stir.
Pour sauce over dry mixture and stir together.
Press into small pan lined with parchment paper. Let cool in fridge and chop to desired size

In place of the rice crispies I use a combo mix of:
- chopped raisins, craisins
- seeds like pumpkin seeds, sunflower seeds, chia seeds
- ground flax
- Qia mix (from costco - mix of chia, buckwheat, almonds etc)
