8 oz. (2cups) whole wheat flour;
1 tblspn wheat germ;
1 heaping tsp. baking soda;
1 tsp. cinnamon;
6 medium ripe bananas, mashed;
8 oz (1cup) natural applesauce;
1/2 cup soy milk.

icing:
8 oz package of cream cheese;
3/4 tsp vanilla;
6-3/4 tbsp frozen apple juice concentrate

Directions:

Mash bananas; add applesauce; mix in dry ingredients; add soy milk.
Bake in 9" round cake pan at 325 degrees for one hour.

Ice when cool

Decorate with Cheerios

I found this by searching healthy first birthday cakes for baby. It was actually pretty good. Lily was not crazy for the sticky icing. The main thing is - baby will eat it for photos and it doesn't have any sugar, eggs or cow's milk. Makes baby's mama happy :)
