1 large onion diced
4 stalks of celery diced
6 large cloves of garlic minced
1 diced carrot
1 diced jalapeņo.
1 jar of green salad olives with pimentos chopped with juice.
1tsp. salt.
1 tbsp. oregano.
Corn or canola oil

Directions:
Directions:
Add all ingredients and mix in a bowl. Fill any size jar and add oil to the top of the jar.
Serve on sandwiches or as a garnish to salad. The taste improves over time. Will last up to a year in the refrigerator.
