1 medium potato, cubed
1 T. chopped onion
1 T. oil
1 c. torn fresh spinach
1 c. sausage, cooked and crumbled
4 eggs
1 T. cream
1/2 c. grated cheese

Directions:
Directions:
In a large skillet, cook the potato and onion in oil until potato is tender. Add spinach and sausage. In a bowl, whisk the eggs and cream. Pour over sausage mixture. Cook over medium heat, stirring occasionally, until eggs are completely set. Top with cheese.
