12 eggs
1-2 t. spike seasoning
milk or half and half to taste
1-2 cups grated cheese to taste
2-3 small grated green onions
*Optional chopped veggies like broccoli, spinach, peppers, mushrooms
*Optional chopped meats like bacon, ham, sausage


Directions:

1. Preheat oven to 375º
2. Use paper muffin liners or spray tin with oil
3. layer vegetables, meats and cheese in bottom of each muffin cup
4. mix eggs, milk and spices and pour over meat and veggies until each cup is about 3/4 full
5. Bake 25-35 minutes until muffins have risen and are slightly browned and set.

Muffins will keep in the fridge about a week. Can be frozen and reheated. Microwave thawed muffins about 2 minutes to reheat.
