¼ cup warm water (not hot)
1 pkg. yeast
1 cup lukewarm milk
2 T. sugar
1 tsp. salt
1 egg
2 T. margarine
3 – 3½ cups flour

½ cup warm water (not hot)

1 ½ cup lukewarm milk
½ cups sugar
2 tsp. salt
2 eggs
½ cup margarine
7 – 7½ cups flour

Sweet Roll Icing
8 oz. powdered sugar
1 to 2 T. soft margarine
1 ½ tsp. vanilla
3 T. milk

Directions:
Directions:
Dissolve yeast in warm water. Stir in remaining ingredients, keeping dough as soft as possible, almost sticky, just so you can handle it. Turn onto lightly floured board; knead until smooth and elastic (about 5 minutes). Round into a ball and place in greased bowl; cover with a damp cloth and let rise 90 minutes.

Punch down and roll dough out on lightly floured (15x9) board or counter. (Divide dough in half if using 2 pan measurements.)

Spread with 2T. or more of melted margarine. Sprinkle heavily to taste with sugar and cinnamon. Roll up, seal edges and cut into 1” slices. Place 10-12 slices flat in greased, round 9” cake pan (two 9” pans for double recipe). Cover and let rise again for 1 hour. Bake in preheated oven at 375 degrees for 15-20 minutes until golden. Let cool before icing.

For icing:
Beat all ingredients together until smooth. Add more powdered sugar if runny. (Double icing ingredients if making 2 pan sweet rolls.)

I use this as my basis not just for delicious cinnamon rolls, but as my King Cake. I started making a King Cake for Matthew's class every Fat Tuesday; that continued even while he was at A&M. Just decorate the wet icing with Mardi Gras-colored sanding sugar in purple, green and gold. Be sure to hide a Baby Jesus (or a clean penny or a bean) in the cake -- it's a year of good luck for the person who discovers it. Oh, and also, they get to make the next King Cake!
