1/2t Sugar
2T Flour
1 1/2t Salt
1t Dry Mustard
1t Caraway Seeds
1/4t Pepper - freshly ground
1/4t Ground Sage
4-5lb Pork Loin Roast
Topping:
1 Tin Applesauce - 14oz
3/4C Brown Sugar
1/2t Cinnamon
1/2t Mace
1/2t Salt
Gravy
1C Beef Broth
1/2C Red Wine
Beurre Mania

Directions:
Directions:
1. Mix sugar, flowur, salt, mustard, caraway seeds, pepper and sage together. Rub mixture over the roast - covering all areas.
2. Place the roast, fat side down, in a roasting pan and bake at 325º for 1 1/2 hours.
3. Mix topping ingredients and spread over the roast. Bake one hour longer.
4. Remove roast and let sit. Deglace the roasting pan with the wine and the broth.
5. Pass the applesauce.
