Overnight:
1 cup steel cut oats
1 cup water
2 T. apple vinegar or lemon juice

Morning:
1/2 cup coconut milk
1/2 cup water
1/2 t. salt

Last:
1 apple: peeled, cored, cubed
1 t. cinnamon
sugar or sweetener to taste

Directions:
Directions:
1. Soak (first part of list) oats, water and vinegar/lemon overnight, covered in a warm place.
2. In the morning, bring the (second part of list) coconut milk, water and salt to a boil in a large pot
3. Combine all ingredients, along with (third part of list) apples, cinnamon, and sugar

Let ingredients simmer until everything is hot. Remove from heat and let stand.

*Experiment with other fruits, like bananas, raisins, berries, nuts, coconut, flax, etc. If using dried fruit like apricots or raisins, plump them in boiling water first.
