3 eggs
1 1/2 scoops vanilla protein powder
1 T. ground flax seed
1 t. cinnamon
1 apple, peeled and grated
coconut oil or MCT oil

Directions:
Directions:
Mix together all ingredients in a blender or bullet and blend well. Spray pan with oil or rub lightly to coat. Spoon batter into heated pan, shape to create pancake (it is thick, so it won't flatten on its own). Flip the pancake when the edges are lightly browned and cook until done. Top with pure maple syrup or sprinkle with cinnamon.
