4lbs Stew Meat - Chuck - cut into 1 1/2" chunks
4T Cooking Oil
2t Garlic Salt
1t Pepper - freshly grouind
2 Onions - chopped
4 Garlic cloves - minced
3C Beef Broth
1C Red Wine
1 lb Carrots - cut into 1" chunks
1C Flour
1/2C Butter

Directions:
1. Carefully brown the meat in the cooking oil. It is best to do this in batches - so you can can keep the oil in the skillet very hot - brown the outside of the beef chunks quickly so that they do not loose their juices while you are browning them. Get the pan, then the oil very hot before you put inthe first batches of meat.
2. As the meat browns place it in the slow-cooker.
3. Once all the meat has been browned, brown the onions in the same pan, in batches again if you have to. Get the onions browned by cooking them on high heat. Quickly cook the garlic - 1 to 2 min in the same pan.
4. You may want to be deglazing the pan as you cook the meat and vegetables. Always pouring the deglazed liquid into the slow cooker.
5. Turn the slow cooker to high and cook for 4 to 5 hours. Add the carrots. And cook 1 hour longer.
6. To thicken the stew - create a beurre mania - soften the butter and mix in the flour until you have a solid, malleable paste. Place chunks of the beurre mania in the stew and stir until you get the consistency of the gravy you want.

Serve with roasted potatoes. You may want to add other vegetables with the carrots to create a different version - such as celery or other root vegetables - turnip, parsnip etc.
