1 1/2 C. gluten free flour mix
2 t. baking powder
1 t.. baking soda
1/2 t. salt
1 T. sugar
1/2 t. cinnamon
3 T. oil (for pancakes, use 5 T. oil)
2 eggs
1 cup milk or milk substitute
1 t. vanilla extract

Directions:
Directions:
Mix wet and dry ingredients well, in separate bowls.
Now combine both wet and dry ingredients with each other and beat just until smooth.
Oil a waffle iron and bake on hot waffle iron.

Pancakes: oil a skillet and cook on medium, flipping once the top begins to bubble

Freezes well: Can freeze extras for later.
