1 chopped medium onion
3 large cloves of garlic, chopped
1 pound of ground beef
1 large eggplant
1/2 pound of spicy or mild talian sausage.
1/4 pound of Porcini mushrooms
1 small green pepper
3 chopped and peeled tomatoes
1 tsp. Oregano
red pepper flakes or hot sauce to taste.
1tsp. Cumin
Salt to taste.
1/4 pound of grated Parmesan or Romano cheese

Brown ground beef and sausage. Drain and discard the grease. Remove from pan and save.
Sauté garlic, onions, green pepper, and mushrooms. Add seasoning.

Cut eggplant in half along the long axis. Core out eggplant with a spoon and be careful not to damage the skin. Save the cored out skin for later.

Dice the cored eggplant and add to the sauté mixture. Add diced tomatoes and simmer until most of the liquid is gone. Add the cooked meat and simmer for 5 minutes. Taste and add more seasoning if necessary.

Stuff the mixture into the eggplant shell. Sprinkle with cheese and bake at 350 degrees for 30-45 minutes until the cheese is golden brown.
If all the mixture does not fit into the eggplant shell ( mound it up) put it into an oven safe casserole and cook uncovered.
