1/2 lb. ground beef
1 large onion, chopped
3 garlic cloves, minced
3/4 lb. fresh mushrooms, sliced
2 bunches fresh spinach chopped
1 tbsp. oregano
1/2 tsp. pepper
1 can condensed celery soup
1 c. sour cream
2 c. cooked brown rice
8 oz. shredded mozzarella cheese

In a large skillet, saute beef, onion and garlic; add mushrooms, spinach and seasonings. Continue cooking until spinach is partially cooked, about 5 minutes. Mix in soup, sour cream and rice. Place half in large casserole and top with half of the cheese. Place the rest of the mixture on top and then the remaining cheese. Bake at 350º for 20 to 30 minutes, uncovered. Serves 6.

This recipe won me first place in a passenger contest on a Holland America cruise in 2014. It can easily be made vegetarian by eliminating the ground beef and doubling the amount of fresh mushrooms. The fresh spinach may be replaced with 10 oz. frozen spinach, but it won't have the same depth of flavor. The cooked rice may be replaced with 1 c. instant rice.
