1 green pepper, diced
2 baked potatoes, diced
4 eggs

This is an easy 3-ingredient, hearty breakfast.

Coat the bottom of a skillet with olive oil. Add green pepper and sautee for about 5 min. over medium heat. Then add the potatoes. Cook until the potatoes are brown. Watch that the potatoes don't burn. Add more oil or lower heat, if necessary. At the same time, fill a saucepan halfway with water and put over high heat. Bring to a rolling boil. When potatoes are almost done, carefully add your eggs to the saucepan of boiling water. Let the water continue to boil for about 15 seconds. Turn the heat off and leave the eggs in the saucepan about 1 min or until your preferred doneness.

Fill two plates with the green pepper-potato hash and top with 2 eggs each. Let each person season to taste with salt and pepper. Enjoy!

Whenever we make baked potatoes during the week, I put 2 extra in so that I can make this recipe on the weekend.

You can easily jazz up the hash by adding onions, using red or yellow sweet peppers, or substituting baked sweet potatoes.
