1 cup brown sugar
1 (32 oz.) can pumpkin
2 teaspoons cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1/4 teaspoon cloves
1 (13 oz.) can evaporated milk (NOT sweetened condensed)
1 box any yellow cake mix
3/4 cup melted butter (1 1/2 sticks)

Directions:
Directions:
Preheat oven to 350º.
Combine first five ingredients.
Beat in eggs and milk until mixture is smooth.
Pour into a 9x13 baking dish (sprayed with baking spray)

Sprinkle dry cake mix over pumpkin mixture.
Drizzle melted butter over cake mix.

Bake for 50 minutes.

Serve with whipped cream or Cool Whip

This is an easy substitute for pumpkin pie. The name does not lie, it is yummy. The recipe was in the Charleston, Illinois newspaper. I never made it often because Mike wanted pumpkin pie instead. Balancing sprinkling dry cake mix against rolling pie crust, this yummy would win out every time!
