4 Tbsp. butter
4 Tbsp. flour
1 tsp. salt
pepper to taste
1 (12 oz.) can low-fat evaporated milk
1 1/2 c. regular milk
1/2 to 1 lb. frozen peas
1 tsp. chicken boullion (opt.)

Directions:
In a medium saucepan, melt butter. Stir in flour, salt, and pepper. Slowly stir in milk and cook over medium heat. Stir often until sauce has thickened. If it gets too thick, add more milk. When sauce has reached desired consistency, stir in peas. Heat through.

Boil red potatoes until they're tender. Serve whole or mash them with salt and pepper, milk, and a pat of butter.
