Ingredients: For the Cookies: 1 cup soft butter 1/3 cup whipping cream 2 cups sifted flour
For the filling: 1/4 cup soft butter 3/4 cup sifted confectioners sugar 1 egg yolk 1 teaspoon extract (vanilla or almond)

Directions: |
Directions:Mix butter and flour together then add cream; mix. Chill dough as long as overnight. Cut dough in four parts and work with one piece at a time. Roll out to 1/8" thick and cut with 1-1/2" round cutters. Have a plate of granulated sugar ready and dip rounds in the sugar on both sides. Place rounds on ungreased cookie sheet and with the points of fork, pinch each round three times. Bake 7 to 9 minutes. Watch carefully as you don't want them brown. Cool and put two cookies together with the filling below. Makes about five dozen double cookies.
Filling: Blend butter and confectioners sugar. Beat in one egg yolk and one teaspoon extract. Divide in half and tint pink and green. Put filling on one cookie and place other cookie on top. |

Notes: I usually divide the filling and then add 1/2 teaspoon vanilla to half and 1/2 teaspoon almond extract to the other, but you kids prefer the almond extract!
