2 pounds boneless pork loin roast
cooking oil

CAJUN SEASONING:
3 Tbsp paprika
1/2 tsp cayenne/red pepper
1 Tbsp garlic powder
2 tsp oregano
2 tsp thyme
1/2 tsp salt
1/2 tsp white pepper
1/2 tsp cumin
1/4 tsp nutmeg

Directions:
Directions:
Rub pork lightly with oil.
Combine seasoning mixture and rub well over all surfaces of roast. Place roast in shallow roasting pan and bake in 350º oven for about 1 hour or until internal temperature is 165ºF. Remove from oven and let rest for 10 minutes before slicing.
