2T Vegetable Oil
2lbs Ground Beef
1 Onion - chopped
1 Red Pepper - chopped
1T Salt
1T Pepper - freshly ground
1 Tin Diced Tomatoes - 28oz
3 Tins Red Kidney Beans - 14oz
1 Tin Tomato Paste - 6pz
4T Chili Powder

1 Onion - diced
4 Green Onion - chopped
Cheddar Cheese - shredded
Sour cream, guacomole

Directions:
Directions:
1. Heat Oil in a large sauce pan. Add beef, salt and pepper and cook until almost browned.
2. Add onion and red pepper and cook a few minutes - 2 or 3.
3. Add the chili powder, tomatoes, red kidney beans, tomato paste and heat through on low temperature - don't over cook.
4. Serve the chili with onions, sour cream, gaucomole, salsa and cheese - your choice.
