½ cup margarine
1 ½ cups sugar
2 eggs
2 cups plain flour
1 tsp. baking soda
½ cup buttermilk
1 tsp. vanilla
1 cup chopped nuts
3 very ripe mashed bananas (black spots on fruit)

Directions:
Directions:
Cream margarine and sugar. Add the eggs and mix. Alternate adding the flour and soda with the buttermilk. Mix well. Add vanilla, bananas, and nuts and mix. Pour into 2 loaf pans or muffin tins. Loaves: Bake 325º F for 45-50 minutes. Muffins: 325º F for 30 minutes.
