2 Tbsp olive oil
2 medium yellow/sweet onion
10 cloves garlic, minced
6-8 quarts of tomatoes
1 Tbsp fresh basil, chopped
1 Tbsp fresh parsley, chopped
1 Tbsp fresh oregano, chopped
1 Tbsp brown sugar
1 1/2 Tbsp white sugar
1 Tbsp salt
1/2 tsp red pepper flakes
2 tsp black pepper
1 cup red wine

Directions:
Directions:
In large heavy stock pot sweat onions, add garlic. Heat until onions are soft and transparent.

Add tomatoes.

Add basil, parsley, oregano, sugars, salt, red pepper, and black pepper.

Stir well and bring to boil.

Stir in red wine.

Simmer on low, stirring frequently for at least an hour, 2 hours are better. Be very careful not to let it burn.

Serve with spaghetti noodles, Parmesan cheese and crusty bread.

THIS RECIPE WILL MAKE MORE THAN ONE MEAL. FREEZE THE EXTRA SAUCE FOR ANOTHER DAY.
