2 Chicken Breasts - skin on, bone in
1t Salt
1t Pepper - freshly ground
1/4C Flour
1/4C Olive Oil

2T Olive Oil
2 Shallots - finely diced
1C Beef Broth
1/2C Red Wine
2T Butter
2T Corn Starch
4T Cold Water

Directions:
Directions:
1. Combine flour, salt and pepper in a paper or plastic bag.
2. Cut each chicken breast into 2 pieces. Place the chicken breasts in the flour mixture and shake.
3. Saute chicken on all sides in hot oil in a skillet for 2-3 minutes. Lightly browning it on all sides.
4. Put the chicken in a shallow roasting pan and bake at 425º - about 15 minutes and cook chicken through.
Sauce:
1. Heat 2T olive oil in a skillet
2. Add shallots and brown.
3. Add beef broth and wine on cook on high heat to reduce and thicken
4. Add butter - and if you want to make the sauce thicker - mix the cold water and corn starch - and stir into the mixture - small portion at a time, it can really thicken the sauce quickly.
