Creamy Chicken Chalupas Recipe

6+ flour tortillas
2 chicken breasts, cooked & cubed
1 can of cream of chicken soup
1/2 pt. sour cream
1/4 lb. grated jack cheese
1/4 lb. grated cheddar cheese
2 oz. ( 1/2 can) diced chilies
Chopped cilantro (optional)
Chopped green onion (optional)

Cube chicken, cook in frying pan and drain water - set aside.

Combine soup, chilies, sour cream and 2/3 of grated cheese. Reserve approximately 1 cup of this mixture for the topping.

Add cubed chicken to the remaining mixture.

Place 3-4 tablespoons of chicken mixture on tortilla (if desired, add cilantro), and roll.

Place in 9x13 inch pan.

Cover with reserved sauce; sprinkle with remaining cheese (if desired, sprinkle with chopped green onion).

Bake at 350 degrees for 45 minutes.

*Recipe is easily doubled, and freezes well.
