1 c. rice, any kind that you prefer
1 1/2 - 2 lb. Shanghai Bak Choy, or, Small Bak Choy (better that you cook more than less)
1 large chunk of ginger, chopped small, but not fine
4 - 5 Tbsp. oil
1/2 tsp. salt

Directions:
Directions:
Cook rice as usual.
Wash the choy and roughly chop in approximately 1/2 " slices.
Heat oil in wok; add ginger, cook for a few seconds before adding the choy.
Toss to coat the choy in oil and cook until it is limp but vibrant green.
Add the cooked rice to the choy and continue to stir until well mixed.
Serve.

If you wish to add meat to this dish, marinade the meat of your choice, and cook separately, from the choy. Then add altogether with rice and mix well. You may wish to adjust the amount of salt used because of the salt or soy sauce you will have used to marinade your meat
