1 lb  Italian sausage (I like mild sausage)
1.5 lbs baby red potatoes, quartered
1 large  onion, chopped
1/4 cup  bacon bits (optional)
2 garlic cloves, minced
up to 4 cups chopped kale--your call
2 cups matchstick carrots
2 (8 oz.) cans chicken broth
1 cup  heavy whipping cream

Directions:
Directions:
Brown sausage in soup pot. Add chicken broth and water to pot and stir. Place onions, potatoes, carrots, and garlic in the pot. Cook on medium heat until potatoes are done. Add bacon bits if desired.
Salt and pepper to taste. Simmer a few more minutes. Turn to low heat. Add kale and cream (kale will wilt down immediately.) Serve while warm.  Enjoy!
