3-4 chicken breasts cooked and diced
4 c chicken stock
2 c half and half
1 stalk of celery
1 clove garlic chopped (we take it easy on this)
1/2 carrot shredded
1/2 onion diced
1 c fresh spinach
1 T olive oil
1 t thyme
salt and pepper
16 oz potato gnocchi
1 T corn starch

Saute onion, celery, garlic, carrot in oil until onion is translucent. Add chicken, chicken stock, half and half, salt, pepper and thyme. Heat to boiling then add gnocchi. Gently boil for 4 minutes. Turn down to simmer for 10 minutes. Add spinach and cook 1-3 minutes until wilted. Heat to boil. Dissolve cornstarch in 1-2 T of water. Add to soup to thicken. serve.
