6 boneless, skinless chicken breasts
7 C. water
1 t. salt
½ t. pepper
4 chicken bouillon cubes
1 medium onion, chopped and sautéed
1-2 C. chopped celery
2 C. sliced carrots
3 C. diced potatoes
3 C. cooked rice
2/3 lb. Velveeta

Directions:
Directions:
Cook chicken in water with onions, celery and seasonings until tender. Remove chicken and cut into bite-sized pieces. Meanwhile, add carrots and potatoes; cook until tender. Return chicken to vegetables, adding water if necessary to cover. Cook over low heat until heated through. Before serving, add rice and cheese, stirring until cheese melts.
