1 1/4 c Sugar
1/2 c Vegetable Oil
2 tsp Vanilla
2 Eggs
2 c Flour
1 tsp Salt
1 1/2 tsp Baking Soda
1/2 c Cocoa
2 c Zucchini, peeled and grated
1/2 c Chopped Walnuts, optional

Directions:
Directions:
Mix together sugar, oil, vanilla, and eggs. In another bowl, combine flour, salt, baking soda and cocoa. Add sugar/oil mixture. Mix well. Fold in zucchini and nuts. Pour into a greased, floured 9" x 13" pan. Bake @ 350º for 20 mins or until toothpick comes out clean.
