1 lb crispy skinned roast pork
Fresh mustard green
Equal portion of pickled mustard green

Directions:
Directions:
Cut mustard greens into bite-sized pieces.
In a dry skillet, put sliced roast pork on medium high heat. Put lid on, and render the fat (approx. 12 - 15 minutes).
After 15 minutes, toss the meat to loosen from the pan.
Add fresh mustard green to the pork and stir fry.
Cover and cook on medium heat for about 5 minutes.
Add pickled mustard greens and toss together
Season to taste with the pickling solution at the same time that the pickled greens are added.
You may have to add more salt or sugar to taste.
Apply enough heat so the food doesn't scorch to reduce the juices.
