(For 8 chicken wings)
1/2 c dark soy sauce
1/2 c light soy sauce
1 star anise
1/3" sliced ginger with skin
1 large garlic clove
1/2 c dry sherry
1/2 c water
approx. 1/3 c to suit to taste: palm sugar, rock sugar, white, yellow, or brown sugar, Chinese cane sugar in strips. The type of sugar you use will change the flavor slightly

Add all the ingredients into pot and bring to a boil. Taste according to your preference, and adjust to your liking.
Add rinsed chicken parts.
Bring it to a boil.
Simmer 10 minutes.
Turn to coat chicken evenly.
Simmer for 10 minutes.
Turn off heat and let it rest (without peaking) for another 10 - 15 minutes minimum.

Soy sauce can be reused several times for other chicken parts, but you'll have to add more soy sauce. The soy sauce can also be used for noodles, cold or hot.
