4 egg yolks
4 egg whites
1 can Eagle Brand Milk (sweetened condensed)
1/3 cup of lime juice (use fresh squeezed not bottled)

Graham Pie Crust:
1 5 and 1/3 packet graham crackers crushed (about 1 2/3 cups)
1/4 cup sugar
1/4 cup plus 2 tbsp. butter; melted

Put yolks in large mixing bowl and beat well; add mile slowly while beating; add lime juice and a pinch of salt. In separate bowl, whip egg whites until stiff; Fold in to first mixture. Can add a pinch of green food coloring; Mrs. Cholak says real southern key lime is cream colored not green but I add a pinch anyway !Pour filling into graham cracker crust and bake 15 minutes at 350 degrees.

Graham Crust:
Combine all ingredients; press firmly on bottom and edges of a 9 inch pie plate. Bake at 350 for 7-9 minutes before adding filling above and baking for pie directions (Tip: if you want to use this recipe for frozen pies; you don't have to bake first)

Cool the pie; store in fridge; top with Real Whipped Cream. (Beat it at high speed until firm and then add powdered sugar until sweet enough; just keep tasting: Yum!)

This pie is best when you make your own crust! They are much better home-made than store bought. You can't beat the real whipped cream either! Cool whip and redi-whip don't compare. When you want me to, I will give you a real pie crust making lesson (crusts for fruit pies). There is an art to it to make it turn out right!
