1½ cup old fashion oatmeal
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 cup butter unsalted, softened
1 cup white sugar
1 cup brown sugar firmly packed
1 Tbsp. vanilla extract
3/4 cup peanut butter
2 large eggs
1 - 12 oz. bag chocolate chips

Directions:
Directions:
In food processor, pulse 1 cup oatmeal until ground fine. Stir together oats and remaining 1/2 whole oatmeal, flour, baking powder, baking soda & salt. In another large bowl beat together butter and sugars until light and fluffy, then add in vanilla and peanut butter, then add eggs 1 at a time beating well after each addition and gradually beat in flour mixture. Add chocolate chips. Chill cookie dough covered at least 2 hours and up to 1 week.

Preheat oven 350º. Place balls 2" apart on ungreased cookie sheet, flatten slightly. Place cookies in middle of oven 15 minutes (pale golden). Cool cookies on baking sheet for 5 minutes then transfer to cooling rack.
